Fabulous Chili

So because the weather was a little cool today (and I needed to burn off the feisty in me from this morning), I decided to make chili and homemade cornbread for dinner. Cornbread was fine but the honey/lemon compound butter really made it. The chili was definitely better than I expected so of course I wanted to share the recipe. Because we had a friend over who doesn't go for cilantro, I left it on the side. I think next time I make it I may add some chopped jalapeno because the chili itself wasn't that hot. The pepper-jack cheese really added a lot of flavor and extra heat to it.

Try it. It's really good. :)

A call or a hope?

In church today I learned that there is no Youth Leader currently. My first reaction was disappointment. My second, third and fourth reactions were growing bits of frustration and feistiness.

I grew up in churches that, thankfully, had really strong programs for children. Every year from first to sixth grade I participated in Kids' Praise musicals, VBS, Awanas and various other programs to get children learning about and praising God. I'm still learning about this church and it seems that they have a good children's program but their youth are hurting for some organization and guidance.

In high school we joined a church that did officially have a youth group and leader however there was little to no learning about and worshipping God. It basically was a weekly kickball party (or indoor dodgeball when the weather was cold). At first I loved the activity but soon grew tired of games being the only reason to meet. I found a church about 45 minutes from my house that had this INCREDIBLE Tuesday night Youth Program that was just....wow. Wow wow wow. So I lead a contingent of others every Tuesday to attend this group. I also pushed for the group at our church to go to a youth conference in 1997 and 2000 (DC/LA 97 and DC/LA 2000). These conferences had a particular impact on me.

It's always bothered me (and I use the term "bothered" much too politely here) to be a part of churches that do not take their youth seriously. Who do they expect will be leading the church in 5 years?? 10 years???? How can a church expect to have adults volunteer and become active in the congregation if they never learned how to as teenagers and young adults?

So, it's now on my heart to consider volunteering as Youth Leader; even though I did not grow up Lutheran and am still learning about the traditions, etc myself. This would be a HUGE undertaking and one I will not rush into. I need to pray about this, talk with people at church and learn about what's going on. I know that if I can help organize the youth and show them that they DO have a place and this is THEIR CHURCH TOO then I will have fulfilled something. I will have given them something that I wanted so badly as a teen and am not sure I gt exactly what I was looking for.

I need to find out if God has laid this on my heart to do or if I'm emotionally responding to some issues I haven't completely laid to rest from my own teen years. Time will tell...

Single Mommy

Well, as I type this Mr. S is en route to San Francisco on a business trip. That's right; that means I'm a single mommy this week. Yaaaay. :p Shouldn't be too bad though because we decided to kennel Monte this week at the vet so I wouldn't have to deal with his whining on top of everything else. It's just me, Gavin and the cats (and cats are the perfect pet so...). ;)

This is going to be one of those times when I'm grateful that I work. Not that I don't love being home with my son, but the days will go by faster at the office.

Everything will be fine but I'm still anxiously looking forward to Saturday when he's home again (he gets home Friday night actually but we'll be in bed when he does).

Health Woes

Some days I really do think my body hates me.

So, I've been dealing with hyperthyroidism for a couple months now. I'm taking something for it and still waiting for the pills to work their magic in a noticeable way. In case you're wondering, the normal range for your thyroid is .02 to .4...my thyroid initially scored 29.2. No, the decimal point is not in the wrong place. ;) I'm getting better there though; my most recent test showed I'm back within normal range (.3), but still on the high end of things. Hopefully I'll be back to normal soon!!

But while I'm coping with my thyroid issues and all the oh-so-lovely symptoms that come with that (I hope you noticed the dripping sarcasm there), my body decides to take another swipe at me: strep throat. Over the weekend I went from having just your run of the mill frustrated bad day to feeling sweaty hot but chilled to the bone and my throat hurt really bad. My tonsils were red and swollen and had white spots on them. I had no interest in eating. On Saturday Mr. S sent me to bed at 7:00. Sunday wasn't much better since nausea decided to join the list of icky feelings. By Sunday evening we actually thought to take my temperature (101).

By now you're probably wondering why I'm so perturbed by this. Well, strep's one thing but it's the TIMING of it that is really aggravating. At work this is a particularly big week on campus. My office has 2 events running simultaneously this week, with today (Tuesday) being an especially big day because a student is earning his Six Sigma Black Belt Certification (not an easy feat; usually takes a year or more to do).

So Sunday night I realize that this is bad and I most likely wouldn't be able to make it to the office at 6:45 the next morning to set up for our events as I was scheduled to do (make note, at this time I wasn't sure I had strep throat; I just felt terrible). So I call my boss at home to forewarn her and also hope she'd be able to help my colleague with setup in the morning. If only it were that easy though....turned out her youngest developed chicken pox. Are you laughing at this comedy of errors yet?? So, of the three people who are used to and capable of setting up the first day of a really big week, 2 are our of commission.

At this time I'd like to ask my mom and MIL to stop reading because they probably won't like what I did.... On Monday morning I went to work to setup. I'm sorry!!! I had to! I went with the intention of setting up and then going back home again immediately. My fever was down (99.6) and I couldn't abandon my colleague. So I setup for the events, go home, and snuggle into the couch to take periodic naps and make sure I can go to work in the morning.

WRONG!! Oh, this so gets better! At 11:30 Mr. S calls... Gavin has a rash on his arms and legs (we thought it was rug burn) and I need to go get him. Are you kidding me???? So I call the doctor, setup a 2:00 appt for him and go get the kid. Day care thinks he's either got an allergic reaction to the ear infection medicine he's on or maybe strep throat. The latter caught my attention because by this point I was beginning to wonder if I had strep throat but I didn't want to acknowledge it or know because if I had it, I'd have to stay home from work for another day and there's just too much to do. But if my child had it and I had unknowingly given it to him that's a whole other deal. So we go to the doctor that afternoon and learn that I pretty much do have it (doctor was so confident she didn't wait for test results, just started treatment for strep) but Gavin does not. We're not sure what the rash is but we have some cream for it and it's already looking much better.

I sit at home today now. During a big week for my office. This just sucks. I'm feeling MUCH better now but am insanely frustrated that I can't get into the office and pull my weight. I'll try and rest today but will most likely work off some frustration by cleaning the upstairs.

Cool Stuff

Believe it or not, this blog is about more than my son (who, btw, is working on tooth #2, pulling himself up on everything and learning to walk)! Check this out. This is a student where I work and actually he comes into my department regularly since the office he works in is directly behind ours.

The only way I could be more geeked out by this is if he had built a robotic Yoda or something out of Legos. ;)
