He asked for more!

I wouldn't call my son a picky eater by any means but he is obviously going through some finicky stages where he either likes something or he doesn't. Chicken has been a struggle. I was beginning to think he just didn't like chicken. Wouldn't be a huge surprise to me since for much of my pregnancy I was practically a vegetarian (meat was ok but I craaaaaaaaaaaaaaaaaaaved salads). And then I learned from his day care that he was quite obsessed with chicken nuggets, to the point where he was taking some off another girl's plate!

So now I have a new strategy... I always cut his food into bite-sized pieces because he believes chewing is optional. I'll just start calling whatever chicken I'm serving "chicken nuggets" and we'll see what happens. It sort of worked with the Pecan Chicken I made a couple weeks ago. Last night though I tried a new recipe, a grilled chicken recipe, and not only did he eat it with only 1 prompt but he asked for MORE!! I'm so thrilled that I just had to share the recipe with you: :)

Beer Lime Grilled Chicken
  • 1 lime, juiced
  • 1 (12 fluid ounce) can light colored beer
  • 1 teaspoon honey
  • 2 cloves garlic, minced
  • 2 tablespoons chopped fresh cilantro
  • Salt and pepper
  • 4 skinless, boneless chicken breast halves
In a bowl, mix the lime juice, beer, honey, garlic, cilantro, and salt and pepper until the honey dissolves. Pour the mixture over the chicken, cover and marinate for 30 minutes*.

Preheat an outdoor grill for medium heat and lightly oil grate.


Remove chicken from marinade and shake off excess; discard remaining marinade. Grill chicken until tender and juices run clear, about 7 minutes per side.


*NOTE: I'm careful when working with raw chicken around Gavin because he randomly will desperately insist on being held or "helping" or something else when I may have to touch him. So I put this together while he napped and the chicken marinated closer to 3 hours instead of 30 minutes. I'd say this needs to marinate at least 30 minutes but longer is better. :)
