Fabulous Chili

So because the weather was a little cool today (and I needed to burn off the feisty in me from this morning), I decided to make chili and homemade cornbread for dinner. Cornbread was fine but the honey/lemon compound butter really made it. The chili was definitely better than I expected so of course I wanted to share the recipe. Because we had a friend over who doesn't go for cilantro, I left it on the side. I think next time I make it I may add some chopped jalapeno because the chili itself wasn't that hot. The pepper-jack cheese really added a lot of flavor and extra heat to it.
